Words are hard at a time like this. These are the Irish expressions people use, with what each one means.
We'd keep it short and quiet: one line, your name, and the person's name if you knew them well, and we'd choose the Irish form that matches the person who has died.
Sorry for your trouble.

May his soul be at God's right hand (may he rest in peace).
Say it: Ar yesh Day guh rev a anum
Go ndéana Dia trócaire ar a anam.
May God have mercy on his soul.
Say it: Guh nay-na Dee-a troh-kra ar a anum
Suaimhneas síoraí dá anam.
Eternal peace to his soul.
Beannacht Dé lena anam.
God's blessing on his soul (rip.ie glosses 'his/her').
Say it: Ban-okt Day lenna anum
Comhbhrón ó chroí ort.
Heartfelt sympathy (sincere condolences) to you.
Say it: Leh khom-vrone oh khree
Mo chomhbhrón ort agus ar do mhuintir.
My condolences to you and your family.
Is olc liom do bhris.
I am sorry for your loss (literally, roughly, 'I am sorry for your breaking').
